The 83 - 83% Whole Grain Sourdough Boule

The 83 is our 83% whole grain sourdough boule. It contains our custom blend of organic whole-grain flours. The biggest percentage is white whole wheat flour, which is softer than the more traditional red whole wheat you may be accustomed to. Our blend also contains significant amounts of spelt and einkorn flours, two ancient wheat grains. That means they have less gluten, more protein, and are higher in micronutrients like minerals and antioxidants than modern, hybridized grains. And of course, whole grains contain much more fiber than refined grains. We round out the recipe with 17% organic bread flour. The extra gluten that more refined bread flour provides creates a softer, more enjoyable loaf. Finally, this loaf contains no added yeast, relying entirely on the natural fermentation of our sourdough starter, which is also fed organic flour. Loaves are about 600 grams.
